- 1 Caractère Half-Baguette
- 50g Caesar sauce
- 85g roasted chicken breast
- 20g bacon
- 20g Parmesan
- 20g sucrine lettuce
- 10g onion
- 5g walnuts
- 2g quail egg
- Parsley
Preparation steps
- Slice the chiken breasts.
- Cook the bacon between two sheets of baking paper for 20 minutes at 180°C.
- Fry in the pan the onion rings and the parsley.
- Finely slice the Parmesan.
- Cut the Caractère Half-Baguette in 2/3.
- Fill the Half-Baguette, starting with the sauce, the chopped sucrine leaf and the rest of the ingredients.
Chef's tip
Caesar sauce : mix 1 anchovy fillet with 1 hard-boiled egg yolk, 10g of Parmesan, a hint of garlic, 1 teaspoon of lemon juice, 2 teaspoon of old-style mustard and Worcestershire sauce, 50g of mayonnaise. Season with pepper. Mix the sauce in the blender for a creamier texture.
